Soya beans Salad

Hi All,
Soya beans!!! Healthiest beans for every one. Many people do not like to have it in beans form But there are many ways to get it into your stomach. You can make it flour and add it into wheat flour. You can have soya chunks or soya granules.

I love it (Again me!!!!   ) in any form, as usual. But, this salad is really quick and healthy and tasty!!! My sister in law (Kavita) who stays in Sharjah, loves this salad from me!! When ever I ask her what she wants me to make for her, her first choice is always this salad. So this is for her!!


Soya beans - 1 cup, soaked for 8 hours and boiled till soft
Carrot - 1 big, cleaned and chopped into fine cubes
Capsicum - 1 medium, cleaned and cubed
Onion - 1 medium, cleaned and cubed
Mayonnaise - 2 to 3 tbsp(if you do not like Mayonnaise, add hung curd! it taste great!)
Pepper powder - 1 tsp (avoid this, if you are giving it to kids)
Salt to taste. 
Fresh coriander - 1 tbsp chopped (or even Parsley will taste good, if you like the flavor)
Lime juice - 1 tbsp
Add 1 tbsp of chopped green chilly for spicy taste.
Put  everything in a big bowl and mix it properly. Keep it in a fridge for some time before you serve. 
Munch it in the morning, or in the after noon or in the evening. Or have a bowl of this salad as a dinner!!! 
It gives justice to any time!!!

Moong Salad (Reposted)

Hi all,
Here is my favorite food. I am ready to eat this any time, any day! I can stay with this for more than week, just changing few ingredients and small portion of chapati. 

The grains used here can be either partially cooked or even raw. Raw will taste better. But if you are not used to raw food, it is good to cook it in a microwave for one minute and use it.

Green moong -1 cup 

Yellow moong(Whole moth bean, madaki kalu in Kannada) - 1 cup
Fenugreek seeds(Methi seeds) - 2 tbsp
Cucumber - 1 small (chopped into very small pieces)
Carrot - 1 small (grated)
Fresh coconut(grated) - 1/4 cup or less
Salt to taste
Green chilly - 1 chopped(skip this if you are giving it to kids)
Lime juice - 1 tbsp

Soak both the moong and fenugreek seeds  in water overnight. Remove the water. Keep them tied in the muslin cloth for a day to sprout the moongs(or if you know any other way to sprout it , follow it!)
Wash the beans(moong) with fresh water.
Keep it in microwave for 2 to 3 minutes or till the beans are 3/4th cooked. (Skip this step if you want to have it raw!!)
Take it out in a bowl. Add all other ingredients. Mix it properly. Adjust the seasoning.
Salad is ready to serve.

Simply Salads

Hi All,
I love to eat raw food, in fact, my husband, my both daughters love raw food especially the salad!! We are like cows or sheep when it comes to eat raw food or salad . The salad is the must for every dinner in our house.
And most of the times, when we are not more hungry, we love to eat only Salad.




When we were in Sharjah and Abu Dhabi, most of the times, we used to eat Falafel Sandwich or Showrma sandwich 
with lot of green leaf(In the middle of the restaurant, they keep big bowls of salted carrot, cucumber and radish pickles with different types of leafy vegetables on a table) 
When I read about EC's event,  thought many days about light meals, then decided to send my favorite food to her event. 

Simple veg.salad
To make Simple veg. Salad,
Take vegetables of your choice(which you can eat raw)
Cucumber, Carrot, Onion, Tomato, Onion, Chilli, Ginger, Lettuce leaves. Cut in to desired size and shapes. We love to cut in to long peices as it is easy for my kids to hold in the hand.
Salt to taste
Lime Juice as per taste
Vinegar - 1/2 tsp
Green and black olives - 1/2 cup
(Not in this photo)
Olive Oil - 1 tsp
Oregano or mixed herb - 1 tbsp crushed
Mix all in a Salad bowl and enjoy the crispy taste.



Tomato and Onion Salad
For Tomato and Onion Salad,
Tomato - 2 big Chopped 
Onion - 1 Medium chopped lenthwise
Fresh Coconut - 4 to 6 tbsp
Salt to taste
Fresh Coriander - little
Mix all in a bowl and eat it with crispy Papad.



Veg and Curds Salad
For Veg and Curds Salad,
Cucumber - 1 big chopped
Tomato - 1 big chopped
Curds(Fresh) - 1/2 cup
Salt to taste
Fresh Coriander - little
Mix all in a bowl and eat chilled.
