CUSTARD POWDER COOKIES (FOOD REMAKE)

Hi All,
How are you? How is the weather there in your place? Here its very cold. Past 3 days its raining cats and dogs. Rainy season! enjoy the rain. I am enjoying it. Snacks are must in this rainy season to munch any time  with hot cuppa coffee or chai or milk. Some time sweet snacks, sometime savory.
According to me,(and my kids of course) cookies are the best sweet snacks to munch any time.
Today I am here with a different cookies. Different because its having Custard Powder in it. I have used custard powder in baking cakes and breads, but had never used it in cookies.
This time Jagruti's event Potluck party, Cyber style! - Fun and the Challeng... chose Ramya of LemonKurry  as my partner for this month and she has prepared these lovely cookies. The recipe link is HERE .

I am here with her recipe prepared by me. There was a mistake in something 
I think, because my cookies got skinny. I did not get the fat ones. But taste was good and all got over within half a day. My kids loved it. And I too liked the custard flavor in the mouth.
Ingredients:
All Purpose flour - 3/4 cup +1/8 cup or  200 gm
Custard powder -  3/4 cup or 150 gm
Butter - 3/4 cup or 150 gm
Sugar - 3/4 cup or 150 gm
Baking Sod - 1/2 tbspa
Salt a pinch
Vanilla essence - 3 drops
I added
Cocoa powder - 2 tbsp to half of the dough done
Method :
Take APF, salt and baking soda in a bowl. Sieve it and keep it aside.
Pre heat oven.
Mix the custard powder with APF mix and mix well.
Whisk sugar and butter in a bowl till soft. Add vanilla essence and stir well.
Add the dry flour to this mix to make soft dough. 
Ramya says NOT TO FREEZE THE DOUGH.
Roll the dough in to your desired thickness.  
Cut with a cookie cutter or knife to make shapes.
Arrange these in a baking tray and bake it for 10 minutes or less. Keep an eye to check. Mine got burnt as I kept it for long time because my first batch was very soft.
AND 
I DIVIDED THE DOUGH IN TWO. IN ONE I ADDED 2 TBSP OF COCOA POWDER AS MY YOUNGER ONE WON'T EAT COOKIES IF THERE IS NO CHOCOLATE IN IT.

I got 15 big cookies.

JUMBO CHOCO CHIP COOKIES(food remake)

Hi All,
Cookies!!!  are always welcomed in my house.. any shape, any ingredient but only with one condition, the cookies should have chocolate in it. So when ever I  try new recipe for the cookie I have to replace at least 2 tbsp of flour with cocoa powder.
It was a long time that I baked anything at home. Few days back my younger daughter told me in the morning "mamma, you have become very lazy now a days, you are not baking any cake or cookies for us" That was it,, I started to search the recipes from my other blogger friends and I landed in    's blog. And wanted to give a try to this Chocolate Chips Butter Cookies. But again came the problem of Cocoa powder., and the answer was simple, Replace little amount of flour with cocoa powder.
When I started getting the things to bake these cookies, my daughter came into kitchen. She always love to help me in the kitchen and she is always curious about the ingredients and how to make it. When I prepared the dough, she told me to make biggggggg cookies as she wanted to have it more at a time. Then I remembered my mini flower cup cake baking moulds  which I brought from Pune. 
Here are the jumbo cookies which got vanished within a day.
Planning to bake some more from Jagruti's place, which are prepared with wheat flour and oats..Mixed Nuts, Oats and Whole Wheat Cookies !

Ingredients: 
All purpose flour(Maida) -2 cup
Cocoa powder - 1/4 cup
Butter - 1/2 cup(room temp)
Sugar - 3/4 cup
Egg - 1 
Baking powder -1/4 tsp
Baking soda - 1/2 tsp

                                    

Method:
Preheat the oven at 180degree c.
Take all the dry things in a bowl and mix well.
Beat the butter and sugar till light and fluffy.
Beat in  the egg, mix well.
Then goes the dry flour mix.
Add the choco chips
Mix well to make a soft dough. 
Take small ball from a dough, press slowly it from in your palm. Repeat with the remaining dough. hey, wait, I pressed the dough in to the mould I had.
Arrange these in a baking tray with a little space in between(if using baking tray)and keep in the oven., I kept the mini moulds directly in the oven.
Bake these for 10-12 minutes.
Remove and allow it to cool. They will be crispy after sometime.
Enjoy these with hot cup of coffee, tea or a glass of milk.

Nankhatai with Choco Chips(Food Remake)

Hi All,
My one more try in Baking :-))))
Its just yummy, vanishes as it goes into your mouth.. you crave for some more and you have rights too. The best part is its very easy to make:-)
I am talking about these Nankhatai which I adopted from Simple Indian Food and she took it from  Raaga of The Singing Chef.

I have altered the recipe!!
I added 2 tsp of milk as my dough was very dry and crumbled
AND
I added 1/4 cup of Choco chips as my kids love it..
The result was fantastic.. 
I am going to make these again..

You will be missed Jayasree :-( / Vella Avil and Whole Wheat Choco Chip Cookies

Hi All,
Death is inevitable. We know it, but the pain is also unbearable when it happens in the family or friend circle.  I was in this pain when I heard about Jayasree's death. Sometimes, we really do not know people personally but they become close to us for some or the other reason. Blogging world has given me a chance to know many good people among whom many are my  very good friends. 



I was not so regular visitor to Jayasree's blog(Experiments in Kailas Kitchen), but have tried few of her recipes. So this post is to tribute to her. Her blog is full of amazing and very interesting recipes with an authentic touch.
I tried two of her recipes:
ONE is 
VELLA AVIL : The taste was really good and was perfect for my Thursday Offer to Sai Baba.


and the 
SECOND one is 
WHOLE WHEAT CHOCO CHIP COOKIES with a little change in it. I added little oats powder to make it more healthier.

You will be missed Jayasree.

May her soul rest in peace. May God give her family the strength to face this loss as its not possible to fill the loss by anything.

Whole wheat ,Oat & Chocolate Cookies(T&T)

Hi All,
I always love to participate in the events. If you are regular visitor to my blog, you know it. I get inspired by the themes and I give my best to cook something new according to theme.
This time when I came to know about the T&T guest hosted by Jayasri, it was already late. And when I visited the blog which Jayasri has chosen I was in a world of baking. I browsed the blog for two days and I did not get any recipe for a newbie like me. 
Deeba of  Deeba's Passionate about Baking  is very very creative and I may take years to reach her level when it comes to baking. And the photography!!! no words to explain, I mean it, she is a wonderful blogger with so much passionate about baking. I loved all the recipes, but I had many problems to follow her recipes, 
The first thing was, I am still crawling when it comes to baking, I was not sure about my success in any of the recipes.
 The second thing is ingredients, many ingredients she has used are not available at my place. Even its difficult to get cherries or strawberry also.
When I was browsing for cookies I got this one:
In this recipe also, I did not had chocolate chips and walnuts. Walnuts were out of stock in nearby shop. And I could not afford the time to visit the city to bring walnuts. I replaced it with Almonds.
And getting Chocolate chips was out of question here in my place. I need to go almost 15 Km to get it and that too not sure about the availability.
I thought of skipping the chips and following the remaining ingredients.
When I was about to start, my daughter came and asked me what I am baking, I told her about the cookies, she made a face that she does not want white cookies. She would love to have Chocolate cookies.
So there was no way for me to keep the original recipe as it is. I thought of adding Cocoa powder instead of half the qty of oats. 
Here is the recipe for the cookies with some alterations(no option for me):


Recipe in my words:
I used half the qty from original recipe(more than a dozen cookies came out with this qty)
Ingredients:
Dry Ingredients:
Whole Wheat flour - 1/4 cup + 1 tbsp
Oats - 1 cup(I used Saffola rolled oats)
Cocoa powder - 1/2 cup
(Original recipe does not have cocoa powder and she has used 1 1/2 cups of oats)
Baking Soda - 1/4 tsp
Baking powder - 1/8 tsp
half a pinch of salt
Finely chopped  almonds - 1/4 cup(original recipe had walnuts and choco chips)


Wet Ingredients:
Butter - 1/4 cup(I used fresh home made at room temperature)
Egg - 1/2
Vanilla essence - 1/2 tsp
Demerara Sugar - 3/8 cup(3 times of 1/8 cup)

Method:
  • Take all the dry ingredients in one bowl. Whisk them and keep aside.
  • In another bowl, cream the butter and sugar till fluffy.
  • Add the egg and vanilla essence. Beat for some more minutes.
  • Add the dry ingredients and mix well. 
  • My dough became dry. It was like a normal chapati dough(little softer)

  • Preheat the oven.
  • Grease the baking tray or  use the baking sheets.
  • Take a tbsp of dough and press to give round shape. You won't get nice shape, but don't worry about the shape. The taste won't differ.
  • Bake at 180C for 12 to 15 minutes. I baked it for 13 minutes.
  • Remove from the tray, remove to cooling racks.
  • Store in a airtight jar.

My both the daughters enjoyed the cookies with their favorite song and dance. Thanks to Deeba for such a lovely recipe and thanks to Jayasri for selecting this blog.

Chocolate Cookies again!

Hi All,
I am getting addicted to baking. All these years I never thought that I will start baking! I always got scared with the word Baking. But last year I took a resolution(which I am always against) that I will start baking and first time I kept my promise.
Here is one more trial from my kitchen
Chocolate Cookies was my first bake after I bought my OTG. I followed the Recipe from Deepa and it was a hit. I prepared it 2-3 times and the box was empty within a day.
Then I thought of taking little risk(I am grown up :-)   ) and tried this recipe:



All Purpose Flour - 1 cup
Sugar - 1/4 cup
Brown sugar - 1/4 cup
Unsalted butter -  1/4 cup
Coco powder - 1/6 cup
Baking Powder - 1/2 tsp
Salt - 1/4 tsp
Milk -  2 tbsp
Sugar to cover the cookies






  • Grease the baking tray. 
  • Preheat the oven.
  • Sieve the APF, Coco powder, baking power and salt in a big vessel.
  • Cream the butter and sugars till creamy and fluffy. 
  • Add the sieved flour to this and mix well.
  • Add milk and knead like a soft dough.
  • Divide the dough in to lemon size balls. Press the balls to make round cookies shape.
  • Roll the cookies slowly on a sugar to get the light sugar coating.
  • Spread the cookies on baking tray.
  • Keep it in the middle rack.
  • Bake it on 180 degree C(350 degrees F) for 10 minutes.
  • Check the cookies. If you feel they are still not done, bake for few more minutes.
  • Cookies will be soft for some time before they get crisp.

My first bake - Chocolate Cookies

Hi All,
At last, today was the day for my OTG to put into the test. I was searching for the easiest recipe, which my kids also should enjoy.  
As on my friends voting for Cookies I thought of trying these cookies. Here is my tale of baking the cookies.
I decided to follow the simple recipe which was given in the book with my OTG. But I got a very good and easy recipe from HERE.  Thanks to Deepa for sharing so easy recipe.
I am giving the recipe too, as I reduced the quantity to half.
All Purpose Flour - 1 cup
Sugar - 1/2 cup
Unsalted butter -  1/4 cup
Coco powder - 1/6 cup
egg- 1/2
White chocolate or milk chocolate -1, cut into small pieces
Baking Powder - 1/2 tsp
Salt - 1/4 tsp
Milk -  2 tbsp
(I skipped the black coffee as I did not had it)

The cups and spoons I used to measure

Grease the baking tray. 
I did not preheat the oven as I DON'T KNOW WHAT IT MEANS AND HOW TO PREHEAT WITH WHAT OPTIONS ON.
Sieve the APF, Coco powder, baking power and salt in a big vessel.
Beat the egg, butter and sugar till creamy and fluffy. 
Add the sieved flour to this and mix well.
Add milk and knead like a soft dough.
Divide the dough in to lemon size balls. Press the balls to make round cookies shape.
Spread the cookies on baking tray.
Keep it in the middle rack.
Bake it on 180 degree C(350 degrees F) for 10 minutes.
First batch, I kept for 20 minutes (as it was written in the book) 
But When I saw the cookies were getting burnt, I was helpless. I was not sure whether to take the timer knob to zero or not.
These are my burnt cookies. The upper part was too good and was crispy. I GRATED THE BURNT SIDE TO REMOVE THE BLACK PART. 


I could not count how many I made as my daughters went on eating!!
I am happy that I started baking and succeeded in it.

PLEASE GUIDE ME FOR GOOD BAKING,
What is Preheating means? What is the temperature, how much time to keep.
Can I off the OTG in the middle?
Can I bring the timer knob to zero If the food is getting burnt?
I hope to get more answers from you all!
